摘要
目的了解2015-2017年江西省市售食品中产单核细胞李斯特菌的污染及分子分型情况。方法采集全省选定的24个市县的超市、百货商场等市场流通环节销售的12类食品(包括肉类、豆制品、速冻米面制品等)样品,采用国家食品污染和有害因素风险监测工作手册方法检测和鉴定产单核细胞李斯特菌。对三年来收集的阳性菌株采用脉冲场凝胶电泳方法(PFGE)进行分子分型。结果三年共采集4816份样品,产单核细胞李斯特菌总检出率为1.43%,2015年污染率较高为2.21%。12类食品中肉与肉制品的检出率较高,2015年为3.58%,2016年为1.57%,2017年2.12%。不同地区采集的样品阳性检出率比较差异有统计学意义(χ2=45.44,P=0.004),各大类食品间的检出率比较差异有统计学意义(χ2=33.98,P<0.001),而不同流通环节抽取的样品比较差异无统计学意义(χ2=7.84,P=0.55)。部分菌株PFGE结果显示型别较多,仅有三株菌PFGE型别为100%一致。结论江西省市售食品中产单核细胞李斯特菌的污染情况稳中向好,但仍有一定的安全隐患,相关监管部门应加强重视,预防食源性疾病的发生。
Objective o study the contamination and molecular typing of Listeria monocytogenes levels in commercial foods from 2015 to 2017 in Jiangxi Province. Methods Food samples cover 12 kinds of foods (including meat food supplements and other foods for infants) were collected from retail location such as supermarkets, department stores in 24 cities and countries of the province. The Listeria monocytogenes was detected with the methods from National work manual on risk monitoring of food contamination and hazardous factors. The pulsed field gel electrophoresis was used to test the molecular typing of positive clones. Results A total Listeria monocytogenes detection positive rate of the 4816 food samples in three years was 1.43% and the pollution rate reached as high as 2.21% in 2015. The highest positive rate of 12 kinds foods was meat and meat products, reached as high as 3.58% in 2015, 1.57% in 2016, 2.21% in 2017. The positive detection rates of samples collected from different regions were statistically different (χ2=45.44, P=0.004), and there were also statistical differences among different kinds of foods (χ2=33.98, P<0.001), while there were no statistical differences among samples collected from different circulation links (χ2=7.84, P=0.55). PFGE results of some strains showed that there were many types, and only three strains had 100% identical PFGE types. Conclusion The contamination of Listeria monocytogenes in commercial food of Jiangxi maintained stability and tended to a good situation, whereas it was still had potential risks for food. The supervision should be enhanced to prevent the foodborne diseases.
