摘要
ε-聚-L-赖氨酸(ε-PL)是一种天然的生物防腐剂,是经分离提取精制而获得的微生物发酵产物,其抑菌谱广、水溶性好、安全性高、热稳定性好,具有广阔的商业化应用前景。从ε-PL的特性、选育、发酵生产及应用等方面综述了ε-PL的研究现状,重点介绍了其抑菌机理方面的研究进展。
ε-Poly-L-lysine(ε-PL),as a natural biological food preservative,is a fermentation product produced from microorganisms by separation and purification.It has wide commercial application prospects due to its broad antimicrobial spectrum,good water solubility,high safety and good thermal stability.In this study,the state of the art on ε-PL characteristics,strain breeding,production and application was briefly reviewed.The progress in antimicrobial mechanisms of ε-PL was mainly summarized.
