摘要
目的:了解和探讨HACCP与7S结合模式在学校食堂食品安全监管中的实践应用效果,为提升学校食堂监管水平提供参考和依据。方法:以衢州职业技术学院第一食堂、第二食堂为研究对象,建立HACCP体系与7S结合模式的管理体系,评价其应用效果。结果:实施HACCP与7S结合模式后,从业人员食品安全知识知晓率提高18%,学校食堂原材料采购查验、索证索票合格率显著提高,蔬菜农药残留检测100%,餐具大肠菌群合格率分别提高15%,师生满意度提高20%。结论:学校食堂建立HACCP与7S结合模式可以显著提高食品安全水平,值得在学校食堂食品安全管理中推广应用。
Objective: To explore the application effect of HACCP combined with 7S management model on food safety management of school canteen. Methods: Two school canteens of Quzhou College of Technology were selected as the research objects. The management models of HACCP and 7S were bound and the application effect was evaluated. Results: The awareness rate of food safety knowledge among employees has been increased by 18%, the qualified rate of raw material procurement inspection, certification and ticket collection in school canteens has been significantly increased, the qualified rate of vegetable pesticide residue detection has been 100%, the qualified rate of tableware coliform has been increased by 15% respectively, and the satisfaction rate of teachers and students has been increased by 20% than that before implementation. Conclusion: Establishment of HACCP combined with 7S management model is beneficial to remarkably improve the whole level of food safety, which is worthy of promotion and application in food safety management in school canteens.
