摘要
本文通过测定总糖、还原糖、淀粉、粗纤维和可溶性膳食纤维5种成分的含量,比较藜麦、小麦、高粱、燕麦及玉米中这5种成分的差别。结果表明,藜麦的总糖、还原糖及淀粉含量低于其他谷物,粗纤维和可溶性膳食纤维的含量高于其他谷物。
Components of Quinoa, wheat, Sorghum, oat and corn were compared by measuring total sugar, reducing sugar, starch, crude fiber and soluble dietary fiber in this paper. The results showed that the content of total sugar, reducing sugar and starch in Quinoa was lower than other grains, and the content of crude fiber and soluble dietary fiber was higher than other grains.
