摘要
在全球化和信息化的竞争环境中,很多餐饮“老字号”企业难以适应,面临着严峻的生存考验。通过对相关研究的梳理,发现餐饮“老字号”企业的品牌问题最受重视,从调查研究、品牌价值分析评价与延伸、消费者行为及顾客满意度提升、传承与推广、创新发展等方面对研究成果进行了整理,从一个侧面反映餐饮“老字号”的研究现状及存在问题,对“老字号”品牌的经营管理实践提供参考。
“Food and Beverage Brand”is a representative brand enterprise in the traditional catering service industry.It is a valuable intangible cultural heritage of China and an important carrier and symbol of the excellent traditional culture of the Chinese nation.In the competitive environment of globalization and informationization,many old-fashioned enterprises have difficulties adapting and facing the severe test of survival.The brand is the life of a time-honored enterprise.Through the combing of the research results of the old brand management,the problems and countermeasures of the old-fashioned management of the restaurant are sorted out on the one hand and,on the other hand,the problems of the research field of the time-honored restaurants are also found.
