摘要
随着脂肪酶在我们生产生活中的广泛应用,人们越来越多地使用生物技术手段对酶蛋白的分子结构进行改造,以改善不同来源脂肪酶的性质,获得更多满足人类需求的脂肪酶。氧阴离子洞是脂肪酶活性中心“口袋”附近的催化元件,因此,在脂肪酶的催化反应过程中,氧阴离子洞结构发挥着很重要的作用,也为此成为研究的热点。在过去的十多年里,人们更加关注对脂肪酶氧阴离子洞的研究并且取得了很大的进展,对此进行了研究和阐述。
With the wide application of lipase in our production and life,people are increasingly using biotechnology to modify the molecular structure of enzyme proteins to improve the properties of lipases from different sources and to meet more human needs.The oxyanion hole is a catalytic element near the“pocket”of the lipase active center.Therefore,the oxyanion hole structure plays an important role in the catalytic reaction of lipase,and it is also a research hotspot.In the past ten years,people have paid more attention to the study of lipase oxygen anion holes and made great progress.This paper studies and expounds this experiment.
