镉在典型蔬菜可食部位富集特征及其健康风险评价 被引量:10

Characteristics of cadmium enrichment in edible parts of typical vegetables and its health risk assessment

摘要 目的:探究镉在不同蔬菜可食部位富集特征,开展健康风险评价,以筛选出镉低积累品种。方法:在相同镉污染(2.94 mg·kg^-1)条件下,利用盆栽试验研究了四类蔬菜(86个品种)可食部位的镉含量(质量分数,下文同此)、富集系数和健康风险。结果:四类蔬菜可食部位镉含量范围依次为叶菜类8.584~66.119 mg ·kg^-1 DW(平均为36.228 mg·kg^-1),根茎类7.355~26.084 mg·kg^-1 DW(平均为12.867 mg·kg^-1),茄果类3.928~12.156 mg·kg^-1 DW(平均为7.001 mg·kg^-1),豆荚类0.260~1.512 mg·kg^-1 DW(平均为 0.784 mg ·kg^-1),对应的镉暴露风险指数平均为4.789,5.129,2.290和0.258;对镉的富集能力:叶菜类(大白菜>小白菜)>根茎类>茄果类(茄子>番茄)>豆荚类;共筛选出10个镉相对低积累品种。结论:叶菜类和根茎类蔬菜镉富集水平较高、健康风险较大,茄果类次之,豆荚类富集水平最低,较为安全。在叶菜类和根茎类蔬菜日常种植及食用时应更谨慎,尽量选择低积累品种种植来降低健康风险。 Aims:To explore the characteristics of cadmium(Cd) enrichment in edible parts of different vegetables,we carried out health risk assessment and screened low Cd accumulation varieties.Methods:Under the same Cd pollution (2.94 mg·kg^-1 ) background,the Cd content,enrichment coefficient and health risk in edible parts of four kinds of vegetables (86 varieties) were studied based on pot experiment.Results:The contents of Cd in edible parts of four kinds of vegetables were 8.484~66.119 mg·kg^-1 DW (average 36.228 mg ·kg^-1 )in leafy vegetables,7.355~26.084 mg·kg^-1 DW(average 12.867 mg·kg^-1 )in rhizomes,3.928 ~12.156 mg·kg^-1 DW(average 7.001 mg·kg^-1 )in eggplants and tomatoes,0.260~1.512 mg·kg^-1 DW(average 0.784 mg·kg^-1 )in pods and the corresponding HQ averaged 4.789,5.129 ,2.290 and 0.258,respectively.The ability of Cd enrichment was leaf vegetables (pakchois>cabbage)>rhizomes>Solanaceae (eggplants>tomatoes)>pods and screened out 10 cultivars with relatively low Cd accumulation.Conclusions:Leaf vegetables and rhizome have higher Cd enrichment level and higher health risk,followed by eggplants and tomatoes,and pods have the lowest level of Cd enrichment,which is safer.Thus,leaf vegetables and rhizome vegetables should be planted and eaten more carefully,choose low-accumulation varieties as far as possible to reduce health risks.
