利用高效液相色谱法测定食品中胭脂红酸的探讨 被引量:1

摘要 随着食品行业的不断发展,食品中的添加剂及色素种类也越来越多。食品中色素的添加量要遵循食品安全标准,过量添加色素将会对人体健康产生一定的影响和危害。胭脂红酸作为一种天然着色剂,在食品中的应用非常广泛,而食品中胭脂红酸含量的测定也一直备受关注。本文利用高效液相色谱法对食品样品中的胭脂红酸进行测定。试验结果表明,该方法在0.20~100μg·mL-1范围内呈良好的线性关系,其相关系数为0.9999,加标回收率为85.1%~97.2%,相对标准偏差(n=6)为2.7%~7.4%,检出限为0.3mg·kg^-1,说明高效液相色谱法适用于胭脂红酸的测定。 With the continuous development of food industry,more and more additives and pigments are used in food. The content of pigment in food should follow the standard of food safety,and excessive addition of pigment will have certain influence and harm to human health.As a natural colorant,carmine acid is widely used in food,and the determination of carmine acid in food has attracted much attention.In this paper,high performance liquid chromatography (HPLC) was used to determine carmine acid in food samples.The experimental results showed that the method had a good linear relationship in the range of 0.20 ~ 100 μg·mL^-1,and its phase relationship was good,the correlation coefficient was 0.999 9,recovery rate of standard addition were 85.1%~ 97.2%,relative standard deviation (n=6) was 2.7%~ 7.4%,and the detection limit is 0.3 mg·kg^-1,which indicates that the method is suitable for the determination of carmine acid.
