摘要
综述了火龙果果皮加工利用现状。分析了果皮中色素类物质、果胶、多糖的提取制备工艺以及果皮的综合利用进展,以期促进火龙果果皮加工利用的工业化进程。
Status of processing and utilization of pitaya peel were reviewed.In order to promote the industrialization of processing and utilization of pitaya fruit peel,the technology of extraction and preparation of pigment,pectin and polysaccharide from fruit peel and the comprehensive utilization of fruit peel were analyzed.
