摘要
指出了α-淀粉酶的耐热性已成为当今研究的热点。阐述了对高热稳定性α-淀粉酶的研究意义,总结了α-淀粉酶的来源并主要列举了微生物来源的中高温α-淀粉酶,结合该领域的相关研究对α-淀粉酶热稳定性的影响因素及改造方法进行了综述,为完善α-淀粉酶的热稳定化技术提供参考依据。
The heat resistance of alpha - amylase has become a hot research topic. This paper expounds the research significance of high thermal stability of alpha-amylase;summarized the source of alpha-amylase and lists some main microbial source of high temperature of alpha-amylase. It reviewedfactors influencing on the thermal stability of alpha-amylase and improved methodcombined with the related research in the field, providing a reference for improving the thermal stabilization technology of alpha-amylase.
