摘要
采用Schall烘箱加速氧化法研究天然生育酚、二氢杨梅素、抗坏血酸棕榈酸酯对鲐鱼背腹部肌肉脂肪抗氧化的效果,运用响应面优化法确定最佳复合抗氧化剂配方,结果显示,在天然生育酚0.022%、二氢杨梅素0.031%、抗坏血酸棕榈酸酯0.021%条件下,过氧化值最低。验证性试验表明该抗氧化剂组合对鲐鱼肌肉脂肪具有一定的抗氧化效果。
The Schall oven method was used to accelerate oxidation for researching the antioxidative effect on muscles of Pneumatophorus japonicas by natural tocopherol, dihydromyricetin and ascorbylpalmitate. The best compound antioxidant was confirmed by surface response method. The results showed that the compound antioxidant was composed of natural tocopherol 0.022%, dihydromyricetin 0.031% and ascorbylpalmitate 0.021%, and the peroxide value was lowest. The replication experiment proved that the compound antioxidant had a good antioxidative effect on the muscles of Pneumatophorus japonicas.
