摘要
研究测定了杜长大商品猪的胴体性能及肉品质。结果表明,试验猪的胴体瘦肉率较高为65.82%,肉色和大理石纹评分分别为3.50和3.05,背最长肌中鲜味氨基酸含量占总氨基酸比例及不饱和脂肪酸含量都较高,分别为79.18%和57.52%。
The carcass performance and meat qualities of Duroc,Landrace and Yorkshire crossbred pigs were studied.The results showed that,for Duroc,Landrace and Yorkshire crossbred pigs,lean percentage was higher for 65.82%,meat color scoreand and marbling score were 3.50 and 3.05.The ratio of delicious amino acid content in longissimus muscle total amino acid and content of unsaturated fatty acids were higher,those were 79.18%and 57.52%,respectively.
