摘要
甘薯作为仅次于水稻、小麦、玉米的第四大粮食作物,除含淀粉、矿物质,维生素等多种重要营养成分外,还含许多重要的功能活性成分,比如类胡萝卜素,花青素,多酚等。本文综述了近年来国内外对甘薯功能性成分及其应用,以期为深入研究甘薯功能性成分、培育甘薯新品种提供理论依据。
Sweet potato was the fourth largest food crop after rice,wheat and corn.It not only had many mportant components such as starches, minerals and vitamins,but also had many functional components, such as carotenoids, anthocyanins and caffeoylquinic acids.The active components and function of sweet potato were analyzed in order to provide reference for the analysis of active components and breeding new variety of sweet potato.
