摘要
该文综述了甜瓜不同生理期的芳香物质种类及含量变化,并对电子鼻、气相色谱-质谱联用技术、气相色谱-嗅觉辨别技术在甜瓜香气成分分析领域的应用予以阐述,以期为甜瓜香气的进一步研究奠定基础。
In this paper,the types and contents of aromatic substances in melon at different physiological periods are reviewed,and the application of the Electronic Nose,Gas Chromatography-Mass spectrometry(GC-MS)and Gas Chromatography-Olfactory discrimination techniques used in the field of aroma identification and analysis was described with the purpose of laying a foundation for the further study of muskmelon aroma.
