摘要 木薯食品化开发利用是木薯产业多元化发展的重要方向,因木薯皮集中了木薯绝大部分可引起中毒的氰苷,所以木薯去皮是木薯食品化开发利用不可缺少的加工环节,对木薯食品的规模化、产业化发展起着决定性作用。本文概述了近年来国内外果蔬加工产业中的去皮技术和相应去皮设备的工作原理及特点,并对当前木薯去皮技术的研究与发展进行了总结和展望。 Cassava is one of the three largest potato crops,as well as the main food crop for nearly 700 million people in the world.China is one of the major cassava planting countries,which cassava was introduced and cultivated in the early 19th century for food.Now cassava is mainly used for raw material of industrial starch,alcohol and feed production in China.With the development of food diversification in China,cassava fresh food can be regarded as a new choice for food demand.Due to the presence of hydrocyanic acid in the skin,which can cause poisoning and even death if it was eaten with the skin,fresh cassava must to be peeled clean before cooking.At present,edible cassava peeling mainly depends on manual peeling with a low efficiency that a normal worker can only peel 50~100 kg cassava and cost 100~200 yuan for his labor per day.The cassava will deteriorate quickly if it is not peeled in time,which is one of the main restrictions of large-scale development of cassava food.In order to promote the mechanical peeling of cassava,the effects of mechanical,chemical and steam ways on the peeling of cassava and the advantages and disadvantages of various peeling methods were analyzed in this paper.The development trend of cassava peeling mechanization and the main problems in solving the problem of cassava peeling mechanization are discussed,and the relevant suggestions are given.
