新疆四大优势产区葡萄酒中生物胺含量的测定 被引量:7

Determination of biogenic amines in wines from four major production areas in Xinjiang

摘要 该研究利用高效液相色谱(HPLC)法对新疆天山北麓、焉耆盆地、吐哈盆地及伊犁河谷四大优势产区中60个葡萄酒样品中的总生物胺含量及8种生物胺组分的含量进行检测分析。结果表明,不同产区葡萄酒中生物胺总含量有所差异,生物胺总含量最高可达到226.13 mg/L,而最低仅有9.15 mg/L,伊犁河谷产区葡萄酒中生物胺总含量低于其他产区葡萄酒中生物胺总含量;同一产区中,各葡萄酒样品中生物胺总含量也有所差异,其中吐哈盆地产区中生物胺总含量(9.66~226.13 mg/L)差异较大;不同品种葡萄酒间生物胺总含量也不同。在四大产区的葡萄酒中,精胺含量(0.90~154.60 mg/L)较高;苯乙胺含量(0.33~4.50 mg/L)较低;组胺含量均<15.34 mg/L;各产区葡萄酒中腐胺和尸胺含量相对平稳;部分样品中亚精胺未检出。 Contents of total biogenic amines and 8 kinds of biogenic amines components in 60 wine samples from four major production areas in Xinjiang,including the northern piedmont of the Tianshan Mountains,the Yanqi Basin,the Tuha Basin and the Ili Valley,were detected and analyzed by HPLC.The results showed that total contents of biogenic amines in wines from different production areas were different.The highest total content of biogenic amines reached 226.13 mg/L,and the lowest was only 9.15 mg/L.Total content of biogenic amines in wines from the Ili Valley was lower than other production areas.In the same producing areas,total contents of biogenic amines in wine samples were different,and total contents of biogenic amines from the Tuha Basin production area(9.66-226.13 mg/L)showed great difference.Total contents of biogenic amines in different wines were also different.In the wines from four major producing areas,the content of spermine was higher,ranging from 0.90 to 154.60 mg/L,the content of phenylethyl amine was lower,ranging from 0.33 to 4.50 mg/L,the histamine content was lower than 15.34 mg/L,the content of putrescine and cadaverine in the wines of each production area was relatively stable,and spermidine was not detected in some samples.
