摘要
为更好地开发和利用黔茶新品种,采用顶空固相微萃取气-质联用法(HS-SPME/GC-MS)分析黔茶8号绿茶(Q8G)、黔茶1号绿茶(Q1G)及福鼎大白茶绿茶(FDG)的挥发性成分。结果表明:在3种绿茶样品中共检测到105种香气物质,其中(E)-4,8-二甲基-1,3,7-壬三烯、吲哚、己酸叶醇酯、顺-茉莉酮、戊醛、庚醛、6-甲基-5-庚烯-2-酮、苯乙烯和香叶醇这9种物质在FDG、Q1G和Q8G中存在极显著性差异;Q8G绿茶样品的主要香气物质种类为醇类(37.2%)、含硫化合物(26.3%)、萜烯烃类(11.4%)和酯类(11.1%),Q1G绿茶样品的主要香气物质种类为醇类(37.3%)、含硫化合物(19.5%)、醛类(12.1%)和酯类(10.9%),FDG绿茶样品的主要香气物质种类为醇类(24.8%)、酯类(16.1%)、萜烯烃类(16.0%)和含硫化合物(14.1%);依据保留时间将挥发性物质分为低沸点和中高沸点2大类,Q8G和Q1G以低沸点物质为主,含量分别为74.7%和76.9%,FDG以中高沸点物质为主,含量达56.7%。
In order to develop new varieties of Guizhou Tea more effectively,the volatile constituents in the samples of3green tea varieties Fudingdabaicha(FDG),Qiancha1(Q1G)and Qiancha8(Q8G)were analyzed by headspace solid phase microextraction(HSSPME)coupled with gas chromatography mass spectrometry(GC-MS)in this study.The results showed that there were105aroma substances detected and some of the volatile aroma components were different in the3tea varieties.There were extreme significant differences in(E)-4,8-dimethyl-1,3,7-nonatriene,indole,cis-3-hexenyl caproate,cis-jasmone,pentanal,heptanal,6-methyl-5-hepten-2-one,styrene and geraniol among the FDG,Q1G and Q8G.The main volatile aroma components of the Q8G were alcohols(37.2%),sulfur compounds(26.3%),terpene hydrocarbon(11.4%)and esters(11.1%).Alcohols(37.3%),sulfur compounds(19.5%),aldehydes(12.1%),esters(10.9%)were primary volatile aroma substances in the Q1G.The main volatile aroma compounds in the FDG were alcohols(24.8%),esters(16.1%),terpene hydrocarbon(16.0%)and sulfur compounds(14.1%).The volatile substances were divided into low boiling point and medium-high boiling point ones,the medium-high boiling point aroma substances account for56.7%in the FDG.The proportion of low boiling point aroma components in the Q1G and Q8G were76.9%and74.7%,respectively.
