专业酵母衍生制品在现代葡萄酒酿造过程中的应用

摘要 本文论述了专业酵母衍生制品的研发及其重要成果,以及在葡萄酒酿造中特别是在酒精发酵前后、陈酿与存储以及装瓶前的几个重要阶段的应用。白葡萄酒在葡萄破碎后及酒精发酵中借助富含谷胱甘肽的OPTIWHITE和OPTIMUM WHITE进行有效抗氧化和护色护香,以及在酒精发酵结束后的存储转运过程中借助Pure-Lees Longevity持久地抗氧化保护;红葡萄酒在酒精发酵中添加富含高分子特种多糖的OPTIRED或者OPTIMUM RED,既及时有效稳定颜色,夯实口感饱满基础,又消除或降低植物生青气息,并且在陈酿阶段应用富含低分子特种多糖的OPTILEES或NOBLESSE进一步提升口感饱满和甜润度。最后讨论了无论白葡萄酒还是红葡萄酒均可在装瓶前根据实际酒况添加纯甘露糖蛋白产品Ultima soft或Ultima fresh来稳定平衡酒体。
