水发是干货原料涨发中应用最广泛、最普遍的方法,适用于大部分的动植物和菌藻类的原料,有很多经过油发、碱发、盐发动物性原料最后也要经过水发。水发包括冷水发、温水发和热水发,这几种涨发方法他们的涨发原理都差不多,只是不同的原料质地之间才会有一定的区别。掌握好水发的各种涨发方法,对干货原料涨发工艺起决定作用。
The water-swollen way is widely and commonly used in the dehydrated food.It applies to mostof the animals,plants and the fungus algae.Many animal material that are absorbed in oil,alkali and salt mustbe swallowed in water at last.The water-swollen way contains cold water immersion,warm water immersionand hot water immersion.They have the same theory.Sometimes there is some differences according to thedifferent raw material.So we should master all kinds of ways of water immersion.It plays a key role in the craftof the water-swollen dehydrated food.
