摘要
对瘤胃内共轭亚油酸(CLA)的形成机制、参与氢化的微生物及影响氢化的因素进行了综述,并对如何提高牛乳中CLA含量进行简要概述。
Conjugated linoleic acid (CLA) has anticarcinogenic effects, prevent oxidation, influence on atheroscleroses, improve immune system performance and reduce the deposit of lipid. The emhpasis in this review, will be put on aspects of bio-hydrogenation of unsaturated fatty acids, the formation of conjugated linoleic acid, microbes relating to the hydrogenation in the rumen and factors affecting bio-hydrogenation, and so on.
