摘要
通过对新巢蜜与老巢蜜样品进行检测,结果表明新巢蜜与老巢蜜的质量指标存在差异,新巢蜜水分含量、蔗糖含量分别比老巢蜜平均低4.37%、0.2%,其中水分含量差异极显著(P<0.01);而新巢蜜波关度、酶值、羟甲基糠醛及还原糖的含量分别比老巢蜜高1.5。、0.81、9.41%、1.38 mg/kg,其中羟甲基糠醛的含量差异显著,说明新巢蜜水分含量极显著高于老巢蜜,羟甲基糠醛含量显著高于老巢蜜,而波关度、还原糖、酶值、蔗糖虽有差异但不显著。
The results of the checks on the quality of the new hive honey and old hive honey indicates that there are differences of the two in basic indicators.The water content,sugar content of the new hive honey are 4.37%and 0.2%lower than the old hive honey,respectively.The moisture content difference was significant(P<0.01);while the Baume degrees,enzyme values,HMF and reducing sugars in new hive honey were 1.5°,0.81,9.41%and 1.38 mg / kg higher than that in the old hive honey.The content of HMF of the two are significantly different.It reveals that the new hive honey in the water content was significantly higher than the old hive honey.The HMF content was significantly higher than the old hive honey,and Baume degrees,reducing sugar,enzyme values,although the difference between sucrose,but not significant.
