摘要
大豆胚芽具有很高的营养价值 ,其富含生理活性物质维生素E ,大豆异黄酮和甾醇等。对大豆胚芽的营养成分进行了分析和论述 ,并对其综合利用提出了几点建议。测试结果表明 :大豆胚芽含有 2 8%蛋白质 ,8 7%油 (其中不饱和脂肪酸含量高达 80 % ) ,油中含VE190mg/10 0g ,大豆异黄酮 1 2 3% ,甾醇 0 37%。
There are rich nutritional substances in soybean germ,such as soybean germ oil,tocopherols,sterols,soybean isoflavone, soybean saponin and so on.This paper described the nutrition value and the present situation of soybean germ,and some suggestion of soybean germ comprehensive use.The results show that:soybean germ contains protein 28%,oil 8.7%(in which the unstaute fatty acid is about 80%),vitamin E(in oil)190 mg/100 g,soybean isoflavone 1 23%,sterols 0.37%.
