摘要
为筛选出对重金属砷、汞、镉安全的抗性蘑菇品种,以不同品种双孢蘑菇(Agaricus bisporus)为研究对象,探讨其对重金属砷、汞、镉的富集特性及抵抗性。结果表明:6个品种对3种重金属元素砷、汞、镉均检测出含量值,但未超出食品安全国家标准,总体而言,这6个品种质量安全风险较小,可放心食用。综合分析结果进一步表明,ACCC50554品种的单项污染指数(Pi)为砷0.108、汞0.000、镉0.021,美国品种A15的Pi为砷0.028、汞0.000、镉0.026,这2个品种对重金属污染的综合抗性能力较强,而白茶菇品种对重金属污染的综合抗性能力最弱。
In order to screen resistant mushroom varieties for heavy metal arsenic,mercury and cadmium,the accumulation characteristics and resistance of different varieties of Agaricus bisporus on arsenic,mercury and cadmium were studied.The results showed that all 6 varieties contained arsenic,mercury and cadmium,but they had not exceeded the national standard of food safety.In general,the quality and safety risk of 6 varieties was small and could be safely eaten.The results of comprehensive analysis further showed that the single pollution index(Pi)of ACCC50554 was arsenic0.108,mercury 0.000,cadmium 0.021.The single pollution index(Pi)of American variety A15 was arsenic 0.028,mercury 0.000,cadmium 0.026.ACCC50554 and American variety A15 had strong comprehensive resistance to heavy metal pollution.The comprehensive resistance of Baichagu variety to heavy metal pollution was the weakest.
