2013—2017年南京市动物性食品中兽药及禁用药物污染及膳食安全性评估 被引量:15

Contamination of veterinary drug and forbidden drug in animal derived food and assessment of dietary reliability in Nanjing City from 2013-2017

摘要 目的了解南京市2013—2017年动物性食品中兽药及禁用药物污染状况,评估其人体摄入安全性,为保障食品安全和加强监管提供依据。方法根据《国家食品污染物和有害因素风险监测工作手册》要求采集动物性食品564份,按照标准操作程序检测29种药物残留,结合居民食物消费情况对人体膳食摄入药物的风险进行安全性评估。结果南京市受污染的动物性食品主要为鸡蛋、鸡肉、水产品和畜肉。食品中甲硝唑检出率高达12.6%;主要检出的禁用药物为金刚烷胺、克伦特罗和硝基呋喃代谢物。成年人膳食中克伦特罗最高摄入量MOS值为9.5,对食品安全影响的风险超过了可以接受的限度。结论 2013—2017年南京市动物性食品中克伦特罗对食品安全影响的风险极大,远超过可以接受的限度,相关食品安全监管部门应加大对畜禽饲养、兽药使用情况的关注,重点加强对禁用药物的监督管理,使动物性食品中药物残留引起的风险降到最低。 [Objective]To investigate the contamination of veterinary and forbidden drug in animal derived food in Nanjing City from 2013-2017,assess its dietary reliability,and supply scientific evidence for food safety surveillance.[Methods] 564 samples of animal derived food were collected randomly for the detection of 29 kinds of drugs residues following the Manual for China national food contamination and harmful factors risk monitoring. The dietary exposure assessment of drugs intake was made in combination with the food consumption for residents.[Results]The polluted animal derived food mainly included eggs,chicken,aquatic products and meat. The detection rate of metronidazole was 12.6%. The main forbidden drug were amantadine hydrochloride、clenbuterol hydrochloride and nitrofuran metabolites. Dietary exposure assessment showed that the MOS of clenbuterol hydrochloride maximum amount value for adults was 9.5,which risks exceeded the acceptable limits.[Conclusion]The risk of clenbuterol hydrochloride in animal derived food is serious in Nanjing City from 2013-2017,which is far beyond the acceptable limits. Relevant food safety supervision departments should pay more attention to veterinary drug use in the livestock or poultry farming,and strengthen the supervision and administration of forbidden drug,so as to reduce the dietary drugs exposure.
