摘要
目的研究黑果枸杞色素的稳定性及其最佳存在条件,为黑果枸杞色素的进一步开发利用提供参考。方法利用分光光度法,通过吸光度值的测定对色素的稳定性进行研究。结果黑果枸杞色素易溶于水和极性溶剂,色素水溶液在可见光波长545 nm处存在最大吸光度值;在酸性条件下对热有一定的耐受性,且p H=3.0的酸性环境对其有一定的护色作用,但耐氧化性能不佳;对可见光、紫外光的耐受性均不佳;还原剂Na2SO3对色素的影响效果不显著;蔗糖和苯甲酸钠对黑果枸杞色素的稳定性无影响;金属离子Mg^(2+)、K+、Ca^(2+)、Na+、Al^(3+)对色素的稳定性无不良影响,而金属离子Fe^(2+)、Fe^(3+)、Cu^(2+)具有破坏色素稳定性的作用。结论黑果枸杞色素稳定性较好,适用p H范围较广,尤以酸性环境中色泽最佳,且有很强的浸染能力。
Objective To study the best storage conditions and the stability of pigment of Lycium Ruthenicum Murr,and provide references for its further development and utilization. Methods The spectrophotometry method were employed to study the pigment stability through absorbance value. Results It was easy to solve in water and polar solvent for Lycium ruthenicum pigment,there was the maximum absorbance value in the visible wavelength of 545 nm with pigment aqueous solution.It had resistance against heat in acid condition and the pH=3.0 acidic environment had a certain color-protection effect,but had poor tolerance against oxidation susceptibility,visible light and ultraviolet light in acid condition.It was also found that reducing agent did not exert extra negative effects on the stability of the pigment while sucrose and preservative sodium benzoate did not produce obvious effects.The metal ions such as Mg^2+ ,K^+,Ca^2+ ,Na^+,Al^3+ did not play a bad role while Fe^2+ ,Fe^3+ ,Cu^2+ had negative effects on the pigment stability. Conclusion The Lycium ruthenium pigment stability is good,for a wide range of pH. In the acidic environment,it appear a best color,and possess a strong capacity to dip.
