摘要
抗冻蛋白(AFPs)是具有热滞活性、且能抑制冰晶重结晶的一类蛋白质。由于其特殊的结构和功能,可作为有效的抗冻添加剂应用于冷冻冷藏食品的加工、运输及贮藏过程,以提高食品的质量。本文对近年来有关抗冻蛋白的来源、作用机制以及在食品工业中的应用等方面的研究进展进行了综述。
Antifreeze protein( AFPs) is a kind of protein which has thermal hysteresis activity and it can inhibit the recrystallization of ice crystal. Because of its special structure and function,it can be used as an effective antifreeze additive in the process of processing,transportation and storage of frozen and refrigerated food in order to improve the quality of food. In this paper,its origin, mechanism and application of antifreeze proteins in food industry were introduced.
