符合高校学生营养需求的营养配餐设计与推广研究 被引量:2

摘要 在校大学生健康饮食并没有引起重视,通过营养餐设计帮助大学生群体养成健康饮食习惯。利用标准盘与标准碗盛装伙食品种,称重记录品种重量及主要原料重量;用Excel软件建立营养素数据库,查找食物成分表录入营养素数据,通过输入程序计算每个伙食品种能量、蛋白质、脂肪、碳水化合物等营养素;营养餐设计由食堂人员按照每个人所用标准餐盘量制定符合大学生膳食特点菜肴,每个菜肴标记成份。营养餐达到男生能量2 070 kcal/d,蛋白质62.1 g/d,脂肪57.5 g/d,碳水化合物326 g/d;女生能量1 720 kcal/d,蛋白质51.6 g/d,脂肪47.8 g/d,碳水化合物270.9 g/d,满足大学生一日营养需求。营养餐有效纠正偏食、挑食,调整膳食结构,普及营养知识,使大学生饮食更健康。 This paper puts forward a design of nutritious diet to help the college students develop a healthy dinning habit under the current circumstances of lacking attention to their diet.The standard plates or bowls are used to offer various dishes with the ingredient weights recorded.A database of nutrients is built with excel software for the search of constituents of the dishes,as well as a program to calculate the contents of nutrients(such as energy,protein,fat and carbohydrate)of each dish.The dishes designed according to the characteristics of a nutritious diet for the college students are served on the standard plates by the canteen staff with the ingredients marked.The daily nutritious demand for a college student will be met,when the nutritious diet averages energy 2 070 kcal/d,protein 62.1 g/d,fat 57.5 g/d,and carbohydrate 326 g/d for boys,as well as energy 1 720 cal/d,protein 51.6 g/d,fat 47.8 g/d,and carbohydrate 270.9 g/d for girls.The balanced nutritious diet would correct the food preference and anorexia effectively with the reconstitution of diet,promulgation of nutrition knowledge and promotion of healthy diet for college students.
