亚麻油保质期适用条件研究

摘要 无论采用什么包装材料、包装容积,亚麻油保质期均为18个月,大部分消费者认为18个月内食用完,亚麻油品质即能得到保证。文章研究了亚麻油在保质期内不同存贮条件下的氧化稳定性,结果发现开封后随着食用期的增加,亚麻油过氧化值不断上升,酸败速度加快,保质期远远小于18个月。 No matter what packaging materials and packaging volume are used, the guarantee period of flax oil is 18 months. Most consumers believe that the quality of flax oil can be guaranteed after consumption within 18 months. In this paper, the oxidation stability of flax oil under different storage conditions studied found that the peroxidation value of flax oil increased continuously with the increase of edible period after the cap was opened. As the rate of rancidity accelerated, the storage period is far less than 18 months.
