‘蛇龙珠’葡萄园土壤指标与葡萄酒理化指标相关性分析 被引量:7

Correlation Analysis between Soil Indicators and Physichemical Indexes of Wine Composition in ‘Cabernet Gernischt’ Vineyard

摘要 对烟台产区‘蛇龙珠’葡萄园不同区域土壤指标和葡萄酒理化指标进行测定并对其相关性进行分析,探讨烟台葡萄酒产区土壤对葡萄酒品质的影响。结果表明,‘蛇龙珠’葡萄园土壤主要为砂质壤土和壤质砂土,且土壤中砂粒质量分数相对较高(65.66%~86.29%)。不同区域土壤pH均值为5.52,呈酸性。土壤电导率、矿质元素质量分数及葡萄果实成熟度和葡萄酒酚类物质存在明显区域差异。统计分析表明,葡萄酒中总酸质量浓度与土壤质量含水量呈显著正相关,而与土壤有机质质量分数呈显著负相关。葡萄酒黄酮醇质量浓度与土壤质量含水量呈显著正相关,而与土壤交换性钾和钙质量分数呈显著负相关。葡萄酒中总酚质量浓度与土壤pH和交换性钙质量分数呈显著负相关。葡萄酒pH、单宁、花色苷和总类黄酮等的质量浓度与土壤质量含水量呈显著负相关。葡萄酒中总类黄酮质量浓度与土壤有机质质量分数呈显著正相关。因此,受土壤质地、水分、有机质和矿质元素等的影响,‘蛇龙珠’葡萄酒成分含量存在较大差异。需要根据土壤指标及其与葡萄酒品质指标的相关性对园区不同区域进行精准土壤管理。 The correlations between soil parameters and wine composition were analyzed to explore the effects of soil properties on wine quality in 'Cabernet Gernischt' vineyard from wine region in Yantai. The results showed that two soil textures, including sandy loam and loamy sand soils, were observed across all sites, with relatively high proportions of sand content ranging from 65. 66% to 86.29%. Low soil pH with the mean value of 5.52 was obtained, and spatial variations were observed for soil parameters such as conductivity and major element content, grape maturity and phenolic compounds in wine. Statistical analysis indicated that wine titratable acidity had a significant positive correlation with soil water content, but a significant negative correlation with soil organic matter. The mass concentra- tion of total flavonols in wine had significantly negative correlation with soil water mass concentra- tion, while had significantly positive correlation with soil exchangeable K and Ca. Total phenolics pres- ented a significantly negative correlation with soil pH and exchangeable Ca. Total tannins, anthocya- nins and flavonoid mass concentration and pH of wines were remarkably correlated with soil water mass concentration. Additionally, the mass concentration of flavonoid demonstrated an extremely sig- nificantly positive correlation with soil organic matter. The results indicated that wine composition were influenced by soil properties such as soil texture, soil water mass concentration,organic matter and mineral elements. Zonal management of the vineyard should be carried out based on its relation- ships between soil properties and wine composition.
