摘要
糖尿病患者和肥胖人群专用食品的研究和开发是当前食品加工产业的热点方向。针对糖尿病和肥胖患者的情况,以营养丰富的马铃薯粉和具备降糖功效的抗性淀粉为原料,同时辅以膳食纤维,研发了抗面和抗馍产品。简述了抗面及抗馍产品及其组分的降血糖和减肥的功效,通过升糖指数等降糖评价方法,发现该产品可满足糖尿病患者或糖尿病肾病患者、减肥人群营养需求,为患者提供健康的饮食保障,填补国内市场空白。
The research and development of special foods for diabetics and obese people is a hot topic in the current food processing industry. In view of the conditions of patients with diabetes and obesity,nutrient-rich potato flour and resistant starch with hypoglycemic effect were selected as raw materials,supplemented with dietary fiber,and resistant flour and resistant steamed bread products were developed. This article reported the efficacy of hypoglycemic and slimming of resistant flour and resistant steamed bread products and their components. Through the glycemic index and other lower blood sugar evaluation methods,it was found that such products can meet the nutritional needs of diabetic patients,patients with kidney disease or weight loss crowd,providing healthy dietary support for patients,and filling the gaps in the domestic market.
