崂山鼠李叶茶香气成分研究

摘要 崂山鼠李广泛分布在青岛崂山地区,其叶茶具有独特的香气和品质,是深受当地人民喜爱的茶代日常饮品。茶叶中的挥发性香气物质是茶叶中易挥发性物质的总称,是决定茶叶品质的重要因子之一,为了更好的开发崂山鼠李叶茶,本文运用蒸馏萃取提取方法及气相色谱-质谱联用方法分析其香气成分。经鉴定,含有香气化合物37种,其中醇类12种、醛类9种、酮类9种、酯类3种、烯类2种、酸类和酚类各1种;主要香气成分为叶醛、芳樟醇等。本研究初步探明了崂山鼠李叶茶的香气组成与特点,为崂山鼠李叶茶的科学健康开发提供了试验依据。 Rhamnus laoshanensis are widely distributed in the area of Laoshan Mountains in Qingdao.It has unique aroma and quality,which is uesd as a popular daily drink by the local residents.Volatile aroma substance is one of the decisive factors of the tea quality.In order for a better development of the rhamnus laoshanensis tea,the aroma compounds were extracted using simultaneous distillation and extraction method and determined by capillary gas chromatography-mass spectrometry in this paper.In summary,37 aroma compounds were identified,including 12 kinds of alcohols,9 kinds of aldehydes,9 kinds of ketones,3 kinds of esters,2 kinds of alkenes,1 kind of acids and phenols,and the main components were leaf aldehyde and linalol etc..This study preliminarily proved the aroma compositions of rhamnus laoshanensis tea,which provided the experimental basis for its scientific development.
