摘要
高效液相色谱法对云南维西县甜味、苦味百花蜜中的17种游离氨基酸进行测定。结果表明,维西苦蜜含有所测的17种氨基酸,分别是天冬氨酸、谷氨酸、丝氨酸、组氨酸、甘氨酸、苏氨酸、精氨酸、酪氨酸、胱氨酸、缬氨酸、蛋氨酸、苯丙氨酸、异亮氨酸、亮氨酸、赖氨酸、脯氨酸、色氨酸,维西甜蜜含有16种氨基酸,不含有苏氨酸。本研究旨在为维西百花蜂蜜的质量和营养价值评价以及为百花蜂蜜的研究提供一定的科学依据。
The study determines 17 kinds of free amino acids of sweet and bitter multifloral honey produced in Weixi County, Yunnan Province by High Performance Liquid Chromatography (HPLC). The result shows that the bitter honey in Weixi has all 17 kinds of amino acids, aspartic acid, glutamic acid, serine, histidine, glycine, threonine, arginine, tyrosine, cystine, valine, methionine, phenylalanine, isoleucine, leucine, lysine, proline and tryptophan, respectively. The sweet honey in Weixi contains 16 kinds of amino acids except threonine. The purpose of this study is to evaluate the quality and nutritional values of multifloral honey produced by Apis cerana in Weixi and provide some scientific basis for further studies on multifloral honey.
