摘要
大气压冷等离子体(Atmospheric cold plasma,ACP)是一种新型非热加工技术,在食品工业中具有广阔应用前景。综述了大气压冷等离子体在食品杀菌、内源酶失活、食品组分改性、真菌毒素和农药残留降解、食品包装等领域应用研究进展,同时对影响ACP技术应用的一些问题进行了讨论。研究为大气压冷等离子体技术在食品工业中的广泛应用提供了参考。
Atmospheric cold plasma(ACP) is an emerging non-thermal processing technology, which has great potential applications in the food industry. The present review summarizes the recent progress in the applications of ACP in food processing, including decontamination, inactivation of endogenous enzymes, modification of food components, degradation of mycotoxins and pesticide residues as well as food packaging. Furthermore, the opportunities and challenges in application of ACP in food processing are also discussed. This review provides information for the application of ACP in the food industry.
