摘要
目的对桐庐县某企业食堂发生的食物中毒事件进行调查分析,探讨食物中毒的原因。方法对13份肛拭子样本进行诺如病毒核酸检测,对剩菜及肛拭子样本进行食源性致病菌检测,并对剩菜四季豆炒肉经泡沫试验和有毒豆角速测试剂盒进行皂素定性。结果 13份肛拭子样本诺如病毒核酸阴性,剩菜及肛拭子样本中未检出食源性致病菌,在剩菜四季豆炒肉中检出皂素。结论此次事件为一起由四季豆皂素引起的食源性暴发事件。使用有毒豆角速测试剂盒是定性检查皂素快速有效的检测方法,值得推广使用。
Objective To investigate and analyze a food poisoning in the canteen of an enterprise in Tonglu County,and to explore the causes of food poisoning. Methods Thirteen anal swab samples were conducted for the test of norovirus nucleic acid,leftovers and anal swab samples were conducted for the test of food borne pathogenic bacteria,and leftovers fried pork with kidney beans were conducted for the test of saponin qualitative analysis by foaming test and toxic green bean rapid test kit.Results Thirteen anal swab samples were negative for novovirus nucleic acid,and no food borne pathogenic bacteria were found in leftovers and anal swab samples. Soaponin was detected in fried pork with kidney beans. Conclusion This incident is a food-borne poisoning caused by kidney bean saponin. Toxic green bean rapid test kit is a quick and effective method for qualitative examination of saponin,which is worth popularizing.
