摘要 索马甜是非洲竹芋中提取的一种天然甜味蛋白,具有高甜度、低热量、安全无毒等特点,在食品加工、医药等领域具有较高的商业价值。文章对索马甜来源、理化性质、生产现状、安全性评价及开发应用做简要概述。 Thaumatin is a natural sweet protein extracted from the African plant Thaumatococcus daniellii Benth, which has great commercial value in food processing, medicine and other fields because of its high sweetness, natural, low heat and non-toxic. This paper summarized the source, physicochemical properties, current production, safety evaluation and development of thaumatin.
