摘要
目的分析2015年我国成年居民谷薯类食物的摄入状况。方法选取2015年"中国居民营养状况变迁的队列研究"项目在我国十五省(区、市)调查的18~59岁的成年人(共9828人)作为研究对象,采用连续3d 24h膳食回顾法获得食物摄入数据,分析不同性别、年龄、受教育程度、家庭收入、地区及城乡人群的谷薯类食物消费率及摄入量。结果研究人群平均谷类食物摄入量为(377.2±164.2)g/d,谷薯类食物总摄入量为(410.0±176.2)g/d,其中女性,受教育程度较高者,家庭人均收入较高者,南方居民及城市化程度较高地区的居民谷类食物和谷薯类食物总和的摄入量均相对较低。研究人群大米及其制品的摄入量(228.8±154.9)g/d;面粉及其制品的摄入量(126.7±124.5)g/d;杂粮消费率为39.9%,人均摄入量为(21.7±42.14)g/d;薯类食物消费率为50.5%,人均摄入量为(32.8±46.4)g/d。能量摄入在1000~3000 kcal/d(4186~12558k J/d)的人群中,平均每日谷薯类食物摄入量达到推荐量的占90.4%,而仅有13.1%和18.0%的人杂粮和薯类的摄入量达到了推荐摄入量。结论我国十五省(区、市)居民的谷薯类摄入量基本满足能量需要,但其结构不尽合理,杂粮和薯类消费率和摄入量相对较低。
Objective To analyze the status of cereals and tubers intake in Chinese adults in 2015. Methods A sample including 9828 adults aged 18-59 were derived from China Nutritional Transition Cohort Study 2015. Dietary data were collected using three consecutive 24 h recalls, and the consumption rates and intake amounts were calculated among different genders, age groups, education levels, regions, and urban-rural stratum. Results The average cereal intake was(377.2±164.2)g/d, and the total amount of cereal and tuber intake was(410.0±176.2) g/d in the whole study population. Females, higher educated residents, residents with higher household income per capita, southern residents, and city residents consumed cereals and tubers at lower levels. The average intake of rice and products was(228.8±154.9) g/d, and that of wheat and products was(126.7±124.5)g/d. The consumption rate of coarse cereals among the whole study population was 39.9%, and the average intake was(21.7±42.14)g/d. The consumption rate of tubers was 50.5%, and the average intake was(32.8±46.4)g/d. There were 90.4% of the whole sample who consumed cereals and tubers at the recommended amounts, but only 13.1% and 18.0% consumed coarse cereals and tubers at the recommended amounts. Conclusion In 2015, Chinese adults consumed adequate total cereals and tubers for basic energy supply, but the dietary patterns still need to be optimized.
