摘要
随着社会的发展,人们生活水平的提高,不仅对食品安全高度重视,也逐渐关注食品营养,对营养品质的追求逐渐提高。香蕉中的活性成分如多糖、多酚、多巴胺、脂肪酸、类胡萝卜素等越来越受关注。对香蕉中活性成分的检测方法进行综述,归纳总结不同活性成分的检测方法,以期为开发更快、更高效、更准确的检测方法提供依据。
With the development of society, people's living standards have been improved. People not only pay high attention to food safety,but also food nutrition. The pursuit of nutrient quality has gradually improved. The active ingredients in bananas, such as polysaccharides, polyphenols, dopamine, fatty acids, carotenoids and et al, are more and more concerned.This paper reviews the detection methods of active ingredients in bananas, summarizes the detection methods of different active ingredients,and provides the basis for the development of faster, more efficient and more accurate detection methods.
