全自动电位滴定仪测定鸡精和味精中的谷氨酸钠 被引量:7

摘要 建立全自动电位滴定仪测定鸡精和味精中的谷氨酸钠的方法。全自动电位滴定法与目前国家标准采用的测定鸡精、味精中谷氨酸钠的测定方法进行比较。采用全自动电位滴定仪测定鸡精中的谷氨酸钠,其结果与人工酸度计法相比无显著性差异(P>0.05),方法精密度优于酸度计法。采用全自动电位滴定仪测定味精中的谷氨酸钠,其结果与人工酸度计法相比无显著性差异(P>0.05),但与高氯酸非水滴定法测定结果相比,差异显著(P<0.05)。全自动电位滴定方法适用于鸡精中谷氨酸钠的测定,结果准确度完全满足国家标准要求,且操作简单,精密度好,适用性强。自动电位滴定法和GB 5009.43-2016第三法酸度计法均不适用于加盐味精和纯味精谷氨酸钠的测定。 To establish a method for the determination of sodium glutamate in chicken essence and monosodium glutamate by auto potentiometric titrator. Automatic potentiometric titration method were compared with the current national standard method for the determination of sodium glutamate in chicken essence and monosodium glutamate.Determination of monosodium glutamate in chicken essence by automatic potentiometric titration, the results with artificial pH meter method showed no significant difference(P〉0.05), the precision of the method is better than that of acidity meter. Determination of sodium glutamate in monosodium glutamate by automatic potentiometric titration,the results with the results of the artificial pH meter method showed no significant difference(P〉0.05), but compared with perchloric acid non-aqueous titration method, the difference was significant(P〈0.05). Determination of automatic titration method is applicable to the chicken in the monosodium glutamate, the accuracy of the results fully meet the requirements of national standards, and has the advantages of simple operation, good precision,strong applicability. Determination of automatic potentiometric titration method and GB 5009.43-2016 method third pH meter method is not suitable for salt and monosodium glutamate MSG pure.
