摘要
研究使用恒温水浴干燥、热风干燥、真空干燥、冷冻干燥、喷雾干燥五种干燥方式获得鱼籽多肽样品,通过比较鱼籽多肽性状和抗氧化活性,研究不同干燥方式对鱼籽多肽性状和抗氧化活性的影响,进而优选出最佳干燥方式。结果显示,冷冻干燥和喷雾干燥所得鱼籽多肽样品颜色最浅,质地最松软,真空干燥次之,热风干燥和水浴干燥所得样品颜色最深,质地最硬;真空干燥所得鱼籽多肽样品清除DPPH·能力最强(IC_(50)=0.17 mg/mL),水浴干燥(IC_(50)=0.25 mg/mL)和热风干燥(IC_(50)=0.18 mg/mL)次之,冷冻干燥(IC_(50)=0.81 mg/mL)和喷雾干燥(IC_(50)=0.83 mg/mL)所得样品清除DPPH·能力最差;各干燥方式所得样品清除超氧阴离子自由基能力无明显区别。通过各指标综合判断,真空干燥方式为鱼籽多肽的最佳干燥方式。
It is the effects of different drying methods on the characteristics and antioxidant activity of polypeptides from fish roes. Polypeptides from fish roes are prepared under five drying methods which are water bath drying, heated-air drying, vacuum drying, vacuum freeze drying and pray drying. By comparing the characteristics and antioxidant activity, the optimal drying technology is determined. Judging from the characteristics of polypeptides from fish roes, vacuum freeze drying and pray drying are optimal, the next is vacuum drying, and water bath drying and heated-air drying are the worst. By evaluating the antioxidant activity of polypeptides from fish roes, vacuum drying is first, water bath drying and heated-air drying and second, and vacuum freeze drying and pray drying and last. The optimal drying method of polypeptides from fish roes is vacuum drying by assessing the various indicators synthetically.
