摘要
豆渣是豆类在制作产品过程中的副产物,膳食纤维含量超过60%。虽然豆渣产量极其丰富,但目前主要作为一种劣质低廉的纤维资源用于饲喂动物,甚至作为废物被丢弃。其中所含的膳食纤维没有得到充分的利用。因此,对豆渣进行综合开发利用,既可以减少资源浪费,又可以创造价值,将会为农业经济的发展带来新的增长点。以豆渣为原料,提取其中的膳食纤维,并介绍其功能特性和目前的利用现状。
Bean residue is a byproduct of beans in the process of making products, with dietary fiber content of more than 60%. Although the yield of bean dregs is extremely rich, it is mainly used as a low quality fiber resource for feeding animals and even discarded as waste. Which contains dietary fiber is not fully utilized. Therefore, the comprehensive development and utilization of soybean dregs can reduce the waste of resources and create value, which will bring new growth points for the development of agricultural economy. In this paper, soybean dregs as raw materials, extract the dietary fiber, and introduce its functional characteristics and the current use of the status quo.
