摘要
鲜切果蔬因其新鲜营养、方便而日益受到消费者的青睐,具有广阔的发展前景。由微生物引起的腐败变质及食源性疾病是影响鲜切果蔬质量与安全的重要因素,控制鲜切果蔬的微生物污染能够促进鲜切果蔬加工业健康稳定的发展,适当的气调包装(MAP)技术能有效的控制致病微生物繁殖,延长其货架期寿命。本综述介绍了气调包装技术以及气调包装对鲜切果蔬主要病原菌控制研究进展,同时展望了MAP技术在鲜切果蔬贮藏保鲜方面的发展趋势,为今后鲜切产业包装及贮藏方面研究提供参考。
Because of the nutrition and convenience,the fresh-cut products are more popular and applied widly in the market.However,foodborne illnesses or spoilage caused by microorganisms is a key factor to influence the quality and safety of fresh-cut fruits and vegetables.The micro organism controlling of fresh-cut fruits and vegetables can promote the health and stable development of fresh-cut fruit and vegetable industry.Appropriate modified atmosphere packaging technology(MAP) can effectively control pathogenic bacteria reproduction and prolong the shelf life of product.This study introduced the research progress of modified atmosphere packaging technology and the control of modified atmosphere packaging to the main pathogenic bacteria of fresh cut fruits and vegetable.Meanwhile,it prospected the development trend of MAP technology in fresh storage and preservation of fresh-cut fruits and vegetables,which provided a theoretical reference for the packaging and storage of fresh-cut industry in the future.
