摘要
茄子是中国古代最为常见的蔬菜之一,具有悠久的栽培历史。自西汉起普遍种植,至明代品种趋于稳定、品类繁多。茄子栽培技术注重深栽勤灌,并总结了选种育苗、病虫防害及贮藏方法等传统经验,明代的茄子病虫害防治及与其他作物混作的技术经验最为人称道。俗话说"民以食为天",炒煮蒸腌等烹饪加工技术丰富了茄子的各种风味,同时也延长了茄子的食用期限;茄子文化融入社会生活的各方面。营养丰富的茄子,还具有散血止痛、清热解毒的药用功效。现如今,茄子历史文化也必将大放异彩。
Eggplant is one of the most common vegetables in ancient times of China,and has a long cultivation history.Eggplant has been widely cultivated since the Western Han Dynasty and the variety has tended to be stable since Qing Dynasty.The cultivation technique of eggplants focuses on planting deeply and irrigating oftentimes,the traditional experiences of choosing seeds,preventing injurious insects and preserving the plants were summarized.The techniques of preventing injurious insects and mixed cropping have been already very advanced in Ming Dynasty.As the old saying goes that "People regard food as their prime want",eggplant has several ways of cooking,such as fry,boil,steam and souse;these ways of cooking can also extend the preservation period.Nutritious eggplant can also be used to activate blood for acesodyne and clear heat and remove toxicity.
