摘要
采用国标GB/T 5538-2005中的过氧化值测定方法,对食用油与地沟油进行检测。其中食用油的过氧化值≤7.5mmol/kg,均满足国家油脂标准值。但地沟油的过氧化值范围为98.32mmol/kg^132.54mmol/kg。两种油脂的过氧化值差别较大,故可采用过氧化值指标鉴定食用油及其相应的餐余地沟油。
The peroxide value of edible oil and gutter oil was determined by GB/T 5538-2005. The peroxide value of edible oil was less than 7.5 mmol/kg, which met the national oil standard value. However, the peroxide value of gutter oil was 98.32 mmol/kg- 132.54 mmol/kg. The difference of peroxide value between the two oils is great, so the peroxide value index can be used to identify edible oil and its corresponding after-meal gutter oil.
