小麦籽粒理化特性及面粉生产方法概述 被引量:8

摘要 对小麦籽粒结构及其理化特性进行分析,对小麦粉主要生产方法如等级粉生产法、专用粉生产法、全麦粉生产法以及这3种方法的特点进行概述,提出建立健全加工标准体系、提高全麦粉开发与生产技术水平等相关建议。
