摘要
油梨(Persea americana Mill.)是最具有保健作用的水果之一。目前,科学界对油梨的关注与日俱增,特别是在油梨的功能成分、采后处理和加工技术、食用方法、营养价值和保健作用等方面取得了不少显著研究成果,为油梨功能成分综合利用的研究积累了丰富的知识和经验,奠定了提高油梨功能成分利用率及其加工产品经济效益的良好理论和技术基础。本文对过去数年,尤其是近年来在油梨功能成分测定、产品加工、营养价值、医疗保健、功能饲料等方面的研究进展进行综述,以期为后续油梨综合利用技术研究和推广应用提供参考。
Avocado(Persea americana Mill.) was one of the most healthiest fruits. Much attention had been paid to av ocado recenty with many significant research results, especially in functional comp onents, post-harvest handling, processing technologies, ways of eating, nutritional value and health benefits of avocado. These results provide experiences for utilization of functional components of avocado and the economic efficiency of their processed products. The research advances in avocado functional component measurement, product processing,nutritional values and health benefits over recent years were reviewed. This will provide reference for further research of comprehensive utilization technology and promoting the application of avocado.
