摘要
对大鲵肽溶液分别进行时长0,3,5,10 min的沸水浴,测定其抗氧化活性能力的变化情况。结果表明,不同时间沸水浴处理的大鲵肽水溶液对DPPH·,ABTS^+·,·OH 3种自由基的清除能力无显著性差异。因此,沸水浴时间对大鲵肽的抗氧化活性并没有显著影响。
The giant salamander peptides were boiled for 0,3,5,10 min,the their anti-oxidant effect was determined. The results showed that the free radical scavenging ability of giant salamander peptides was no significantly different for DPPH·,ABTS+·,·OH. Therefore,there was no significant effect of boiling water bath time of giant salamander peptides on antioxidant activity.
