摘要
利用"科学技术工程三元论",通过映射,构建了"烹饪工程"的概念,从烹饪的内容、结果、评价标准,认识到烹饪隶属于工程范畴,并通过烹饪实践证明了该概念存在的合理性,再从工程思维的科学性、价值取向、具象性、逻辑性、艺术性、工具理性、集成性,论述该概念对烹饪的意义。
Using the theory of "science, technology and engineering" in the engineering philosophy to map and construct the concept of "Cooking Engineering". The cooking is attached to engineering category illustra- ted from the respects of its contents, results, and evaluation standards. The existing rationality of the concept was proved by cooking practices. The significance of the concept for cooking was also discussed in respect of the scientific thinking, value orientation, concreteness, logic, artistic quality, instrumental reason and inte- gration in the engineering thinking.
