摘要 利用产自广东省南澳岛的腐烂龙须菜中新发现的一种弧菌科弧菌属(Vibrio sp.)的细菌ZQM2017提取得到高活力琼胶酶对该菌株所产琼胶酶水解琼胶的工艺进行了优化,从反应体系的振荡速率,底物浓度,振荡时间,体系pH和温度条件等因素的变化探讨酶解琼胶产生还原糖的工艺条件,以选择最优的酶解条件。ZQM2017细菌产生的琼胶酶实验结果为制造功能性琼胶寡糖的工艺产业化提供了基础。 A new strain named Vibrio sp. ZQM2017 which can product agarase from ocean in Nan'ao Island,Shantou,Guangdong province was found. The optimization technology of the enzymatic hydrolysis was explored in the experiment,which made contribution to industrialization of agar hydrolysis by agarase to product agar oligosaccharide. In order to select the optimal enzymatic hydrolysis conditions,the process conditions of enzymatic hydrolysis to produce reducing sugar from shaking speed,substrate,shake flask time,pH and the temperature were optimized. The results showed that the optimum conditions for agar hydrolysis by the new agarase were as follows: substrate at the concentration of 3 g/L was dissolved in deionized water,the agar hydrolysis was carried out in a shaking bath at 45 ℃ and 200 r/min for 90 min.
