摘要 表面等离子共振(SPR)生物传感器可实现免标记、实时、高灵敏度、定量、同时动态监测多个生物分子间的相互作用情况。近年来,SPR传感技术在食品安全检测、环境监测、医学诊断等方面的应用快速发展。本文简述了SPR生物传感器的基本原理,重点展示SPR生物传感器近年来在食品检测,主要包括食品品质、成分、安全等方面的应用,特别是致病菌、过敏原等方面的应用现状。 Surface plasmon resonance (SPR) biosensors can be used to detect biomarkers in real - time, with high sensitivity and quantification, and to monitor the interaction of multiple biomolecules. In recent years, SPR sensing technology in food safety testing, environmental monitoring, medical diagnosis has developed rapidly. In this paper, the basic principle of SPR was introduced briefly, the application of SPR biosensor in food detection, including food quality, composition and safety, especially pathogens and allergens was introduced.
