摘要
本研究建立了金属罐体内层涂料中三聚氰胺、三聚氰酸、三聚氰酸一酰胺、三聚氰酸二酰胺的超高效液相色谱-电喷雾串联质谱法检测技术。通过对不同提取溶液模拟金属灌装饮料的生产流程,对其中模拟物进行测试,采用正离子扫描和负离子扫描的方式进行仪器条件研究,确定了三聚氰胺、三聚氰酸、三聚氰酸一酰胺、三聚氰酸二酰胺的监测模式和特征离子对,并进行了MRM模式定性定量分析。该方法的检出限为5.0~25μg/L;线性范围0.5~200μg/L内,相关系数均大于0.995。实验结果表明,灌装饮料使用的金属罐在特定条件下会发生三聚氰胺的迁移,存在食品安全风险,同时未检出其类似物的存在。
A new method using liquid chromatography Tandom Mass Spectrometry to analyse migration of melamine,cyanuric acid,ammelide cyanuric acid amide in metal tank inner coatings.Through a series of experiments to simulate metal filling beverage production process with different extraction solution,we got a conclusion that it will cause migration of melamine in the food producing,packaging and sterilization.The electrospray ionization source in positive and negative ion mode was used for multiple reaction monitoing mode.These four com-ponnts showed good liner relationships with the correlation coefficients more than 0.995.The limits of detection were all in the range of 5.0~25μg/L.These will bring food safety problem which can not be ignored.The experimental results showed that melamine can be detected but its analogues does not exsit in the tank.
